Risco de las Pencas Gofio Mill
A historic hydraulic gofio mill in Barranco de Ruiz, preserving machinery and architecture connected with traditional grain processing.
History & background
The Risco de las Pencas mill, also known as Molino de Ruiz or Molino de la Grieta, is a historic water-powered gofio mill built into the landscape of Barranco de Ruiz. Its location took advantage of flowing water to drive milling machinery.
The surviving complex preserves both built structures and the logic of traditional food production. Mills like this were essential to processing roasted grain into gofio, one of the most characteristic foods of the Canary Islands.
